Jackson chefs win

Bronc Chefs and Restaurant Managers had an outstanding showing in Casper last week, winning the state championship in each of their respective competitions.
Kendall Seaton was also named the Wyoming ProStart Student of the Year. ProStart is the name of the culinary curriculum. For the culinary competition, teams prepared a three-course meal in one hour, using no electricity or refrigeration, with only two single-burner camp stoves as a heat source and coolers with ice for refrigeration.
Teams are judged on their finished product, but also teamwork, safety and sanitation, and menu design and recipe costing. The Restaurant Management teams competed in a “Shark-Tank” style restaurant business plan pitch.
The team’s concept this year was a vegetarian food truck with a 80s and 90s heavy metal theme. Their pitch to the judges was, “We want to be aggressively vegetarian; we want to move away from the cliche that vegetarian food is only for hippies and tofu is the only food on a vegetarian menu.”
This is Jackson’s second Management state title and fourth state championship for Culinary.
